Mexican Chicken Rice Bowl

Yum!!

This creation was more of a creative (and yummy) use of leftovers than an actual recipe, but it was so delicious that I wanted to include it!

I love grocery store rotisserie chicken. I do. My daughter and I eat some the first day I buy it then I remove all the meat for other meals and use the carcass and skin to make amazing chicken stock. I will post that recipe next time!

Anyhoo... tonight I was exhausted and starved so I opted for quick but healthy. And the Mexican Chicken Bowl was born.

Here is what I did:

I placed about 3/4 cup of cooked rice in the bottom of a bowl. I prepare my long grain rice with chicken stock instead of water for flavour but plain rice will do. I topped the rice with some torn rotisserie chicken - - approximately 1/2 cup. I spooned some mild salsa on top of that then I microwaved it for two minutes. I then added a small amount of grated cheese ( I used goat cheddar because I have diet restrictions) a tbls of plain greek yogurt (sour cream would rock but, again, these pesky dietary restrictions) and a healthy sprinkling of fresh cilantro. Feel free to add less, more or omit. I love the stuff.

And then I admired it for a minute or two before I attacked it. Every mouthful was a delight. Really. For fast and easy, this was highly enjoyable.

You could add canned corn or black beans to this, or fresh tomatoes, avacadoes or shredded lettuce...it's all good. Home made salsa will always be best but in something like this the jarred stuff is just fine. Now, you could always use this mixture in a flour or corn tortilla and pretend you are at Chipotle ... no one would blame you.

Roasted Garlic Pumpkin Hummus

Okay, first of all, YUM ALERT! Secondly, I must admit that I stole this idea from several Pinterest recipes and modified it to my liking. I would give crefit but I used like four or five recipes and I have no idea which ones I looked at. I promise this version is my own and in future I will give credit to my inspirations. But I digress...

This hummus is so lovely. It is a beautiful take on basic hummus and even if it sounds strange to you you should totally make it anyway...I promise you will not be sorry.  I didn't photograph each step but I shall explain it all in detail. Here...just look at the finished loveliness...

Ingredients:

1 can of drained, rinsed chickpeas
5-7 cloves of roasted garlic
2/3 cup of pure pumpkin
2 Tbls tahini (optional)
1Tbls olive oil (extra virgin is best)
1Tbls pure maple syrup
2 Tbls water
sea salt to taste
fresh rosemary (optional)

It sounds like a lot of garlic, I know, but roasted garlic is SOOO heavenly and rich...more is better!

Basically you will put all ingredients in a food processor or strong blender.  I like to put the garlic, tahini and water in first, give it a whirl, and then add rest of ingredients. Don't add fresh herbs yet, if using.

You will need to scrape down the sides a few times, and you should totally taste and add seasoning or water or whatever you think it needs. Trust yourself!  Everything will taste infinitely better once it sits for a while so be prepared to have your mind blown.

Add in fresh chopped herbs (if using) and mix in by hand. I sprinkled mine with some paprika because it's pretty and always works in dips.

I served mine with gluten free herb crackers and plain rice crackers. Basically all you need is a spoon. Divine!!!

What is this blog all about?

I am SO glad you asked! In a nutshell (let's say a walnut) this blog is about my love, no...my obsession with food. I love talking about food, I love reading about food, I love cooking food, and I particularly love eating food. In my 20s I did a fairly decent amount of travel and I think my obsession with food was the result.  I was recently diagnosed with a rare disease which has severely limited my food options. Oh the irony...a true foodie forced to give up wheat, gluten, dairy and caffeine. Tragedy. I know. Ever the optimist, I decided that my love affair with food need not end. I have taken the lemons that life has handed me and turned them into paleo lemon tarts (recipe to follow). 

So I hope that you will enjoy my recipes, photos and stories. I will of course include the odd decadent recipe that breaks all the rules, because obviously no one can be good all of the time! Please leave me comments and questions and I will do my very best to respond promptly.
