This creation was more of a creative (and yummy) use of leftovers than an actual recipe, but it was so delicious that I wanted to include it!
I love grocery store rotisserie chicken. I do. My daughter and I eat some the first day I buy it then I remove all the meat for other meals and use the carcass and skin to make amazing chicken stock. I will post that recipe next time!
Anyhoo... tonight I was exhausted and starved so I opted for quick but healthy. And the Mexican Chicken Bowl was born.

Isn't it pretty?
Here is what I did:
I placed about 3/4 cup of cooked rice in the bottom of a bowl. I prepare my long grain rice with chicken stock instead of water for flavour but plain rice will do. I topped the rice with some torn rotisserie chicken - - approximately 1/2 cup. I spooned some mild salsa on top of that then I microwaved it for two minutes. I then added a small amount of grated cheese ( I used goat cheddar because I have diet restrictions) a tbls of plain greek yogurt (sour cream would rock but, again, these pesky dietary restrictions) and a healthy sprinkling of fresh cilantro. Feel free to add less, more or omit. I love the stuff.
And then I admired it for a minute or two before I attacked it. Every mouthful was a delight. Really. For fast and easy, this was highly enjoyable.
You could add canned corn or black beans to this, or fresh tomatoes, avacadoes or shredded lettuce...it's all good. Home made salsa will always be best but in something like this the jarred stuff is just fine. Now, you could always use this mixture in a flour or corn tortilla and pretend you are at Chipotle ... no one would blame you.
So next time you need healthy and fast food, try my Mexican Chicken Rice Bowl...or some variation of it! Enjoy!
